Chop Suey Prairie Style
I recently came across this Chinese restaurant while passing through a small Alberta town. It brought back memories of my own upbringing in a small prairie town that featured a chinese restaurant where town life centered around.
I believe chinese restaurants are still an integral part of the prairie experience, found in communities of all sizes. In most cases, they may take the shape of of a hole-in-the-wall cafe run by families, and feature names like Modern Cafe, or Eddie’s Cafe and Confectionary, but in most cases several generations of families have ran them, and in a lot of cases these families lived or still live in living quarters ajoining the cafe.
Regardless, I have fond memories of stopping in at the Chinese café as a kid, and on occasion enjoying a coke float, or as I got older, a plate of Chop Suey!
